They are always having celebrations with cake and more deserts with dinner and lunch. They also eat a lot of carb and too much sugar. He is already on Metformin for type 2 diabetes.

Yes, you need to bring this up with the RN. Your DH needs a special diet.

Moms AL had a nutritionist associated with the AL. They tracted Moms weight monthly. When she had lost a certain amount of lbs, a nutritionist would be called in. At the time Mom had Graves disease and loss of weight meant her medication needed to be adjusted not she needed nutritionist.

Is your husband on a diabetic diet?
Are you saying that they are knowingly giving sugary sweets to a MC patient on a Diabetic diet per care plan?
You need to discuss this with the administration at once. As you will know, we as a Forum of caregivers have no way to intervene here. Only his own caregivers do.
Can you tell us your husband's weight on entry and his current weight? Also his age and any disability related to his type II diabetes?

Ask for a care plan meeting to go over your concerns, in my area this would be a group meeting that includes dietary, DOC or DON as well as the administrator.

According to your profile your husband has many more health issues than just diabetes including dementia and Parkinson's, so my thought is...be grateful that he has adjusted to his new home and is eating well, even if it means more sweets.
There is no happy ending with dementia as it always leads to death in one way or another, so why not just let him enjoy whatever time he may have left here on this earth and eat what he wants.
Life is too short. If he's happy be happy with and for him, and just enjoy whatever time you may have left with him.
